Tofu Skin Roulade with Sage Mushroom Stuffing. A Vegetarian Thanksgiving Recipe

I wanted to come up with a vegetarian thanksgiving recipe this year that can be a beautiful centerpiece on the vegetarian thanksgiving table. Just because you are vegetarian doesnt mean you are doomed to eat a bunch of sides (or tofurky..ugh!) on thanksgiving day. Make this tofu skin roulade with sage mushroom stuffing a day ahead and reheat it by steaming it for 10 minutes or so.

The tofu skin forms a golden exterior with great texture, and the stuffing inside is moist and mushroomy. Your very own, home made vegetarian tofurky for thanksgiving!

You will generally find tofu skin in Chinese restaurants, it is usually braised or stewed in a sauce.

Tofu skin, also called beancurd skin or yuba is the skin that forms when simmering a pot of soy milk. It comes dried or frozen and is available in Asian stores. If using dried tofu skin or yuba, reconstitute it in hot water. If using frozen, simply defrost it for this recipe.

Tofu skin may look delicate, but it actually holds up very well to stuffing, rolling and steaming (which is what this recipe involves). Serve this tofu skin roulade with sage mushroom stuffing, along with my red wine gravy, kale and goats cheese mashed sweet potato (recipe coming up next!), and steamed green beans or brussels sprouts.

Tofu Skin Roulade with Sage Mushroom Stuffing

serves 2-3, with some left over stuffing to serve on the side.

Ingredients
three 9×12 inch sheets of dried or frozen tofu skin, also called yuba
1 tablespoon butter
1/4 cup diced onion
1/4 cup diced carrots
1/4 cup diced celery
6 large button mushrooms, chopped
1/2 tablespoon chopped fresh sage
2 sprigs of thyme
1/4 cup vegetable stock
1 cup store bought stuffing. I like pepperidge farm.

Method
If using frozen tofu skin or yuba, let it defrost before using. If you are using dried tofu skin or yuba, boil a large pot of water, turn off the heat, and put the tofu skins in the water. Let them soak for 15 minutes. Then gently pull them out of the water, letting all the excess water drip away.

Lightly oil a clean work surface, so that the tofu skins dont stick.

Lay 3 sheets of tofu skin, one on top of the other, so that their longest side is closest to you. If the tofu skins tear a little, dont worry, just patch them up.

Now work on the stuffing.

Heat butter in a skillet, add onion, carrot and celery and cook on medium heat till the onions are soft. Then add mushrooms, saute till the mushrooms are cooked, about 3 minutes. Add the sage and thyme, stir.

Add the stock and bring to a boil. Turn off heat, and stir in stuffing. Toss everything till the stuffing is mixed well, and absorbs all the stock.

Now put the stuffing on the tofu skin layers, leaving a 1/2 inch border (see photo above). You dont have to use all the stuffing if it doesnt fit. Its ok if the stuffing is a little dry, it will moisten up when you steam the roulade.

Gently fold over the right and left sides of the tofu skins. Then pick up the longer side closest to you, and roll away from you. Keep the right and left sides tucked in as you roll away from you. Roll gently but firmly.

Place the roulade on a sheet of aluminum foil. wrap the foil around the roulade to make a log. Twist the ends closed. Repeat this with a second layer of foil.

Now the roulade is ready to steam.

Heat water in a large pot. Place a colander over the pot. Its brim must fit over the pot, but make sure the bottom of the colander doesnt touch the water.

Steaming method 1 – Put the roulade log into the colander, and cover with a lid. Bring the water to a boil, and steam on medium high heat for 1 hour or till the tofu skin is soft. Add more water to the pot as and when necessary.

Steaming method 2 - steam the roulade in a bamboo steamer. Steam till the tofu ski is tender, about 1 hour.

Steaming method 3 – this is what I used. take a skillet large enough to hold the roulade, pour 1/2 to 1 cup water in it. Bring to a boil. Place the roulade in the skillet. Cover it. Reduce heat to medium-high, and let the roulade steam, adding more water as it evaporates. Steam till the tofu skin is tender and no longer rubbery, about 1 hour.

When the roulade has steamed, removed it from the colander, and let it cool a little.

Then removed the foil wrapping.

Heat 1 teaspoon olive oil or butter in a non stick skillet. Carefully place the roulade on the skillet and sear all sides of the roulade till they are lightly golden.

Serve with red wine gravy, and kale and goats cheese mashed sweet potatoes.

Red Wine Gravy

serves about 4

Ingredients
1 cup red wine
1 cup vegetable stock
1 tablespoon flour
1 sprig of thyme, optional
1 tablespoon butter
Salt, pepper

Method
Whisk the wine, stock and flour together. Make sure there are no lumps. Add the thyme sprig. Pour into a sauce pan and simmer till the sauce has reduced to half its original volume. Whisk in the butter, salt and pepper. Strain and serve with tofu skin roulade.

Summer Triple Berry Sangria with a hint of Ginger. A Red Lobster Copycat Recipe

Lets kick off the summer with a sweet, refreshing, berry sangria, shall we? This is a red lobster copy cat recipe — there isnt much vegetarian food at Red Lobster restaurants (not that im expecting any!), but I can eat their buttery biscuits and drink their triple berry sangria all day long.

The berries soak up the vodka and wine, and get all boozy and yummy. But dont let the berries sit in the wine too long, they can discolor. You must serve the sangria as soon as youve made it.

Virginia’s wine country is nearby; so our summers are filled with wine tasting, winery hopping, and picnics at the vineyards. We bring home lots of wine when we go on there day trips. But I dont use the good wine for sangria. Whatever wine is on sale at the grocery will do.

We collect wines from around the world, but our local favorite is Narmada Winery, VA  which has an Indian touch

 If you prefer, you can use white wine in this sangria recipe. Also, change up the ingredients as you like – orange juice instead of blueberry juice, triple sec or brandy instead of vodka, club soda instead of ginger ale..the possibilities are endless.

Summer Triple Berry Sangria with a hint of Ginger Recipe

makes 1 large pitcher

1 cup strawberries hulled
1 cup blueberries
1 cup raspberries
1 teaspoon sized knob of fresh ginger, peeled and lightly crushed
1 1/2 cups berry flavored vodka (I used Absolut raspberry)
1 1/2 cups berry flavored juice (I used Ocean spray blueberry juice)
1/2 cup sugar or to taste
one 750 ml bottle of red wine (I used Barefoot Merlot)
1-2 cups gingerale
ice cubes
mint sprigs for garnish

In a large pitcher, place the strawberries, blueberries, raspberries, ginger, vodka, fruit juice, and sugar. Mix well. Cover the pitcher and let the berries macerate in the fridge for about 30 minutes. Fish out and discard the ginger piece. Just before serving, stir in the wine, gingerale and ice cubes.

Sparkling Wine or Sprakling Grape Juice Gelee with Cranberries & How to use Agar Agar

This is basically jellied fruit juice or wine with cranberries suspended in it. A beautiful, light, and easy dessert for any occasion. Use any kind of juice or wine and add any fruit you like. Read on for some great gelee variations.

I used agar agar to set the gelee. This recipe using agar agar is inspired by Mark Bittman’s book, How to cook everything vegetarian.

Agar-agar, also known as kanten is a form of dried seaweed. It’s a fantastic vegetarian substitute for gelatin.  Gelatin, for those of you who don’t know, is a pork product. So if you are vegetarian or want to avoid pork products and derivatives, agar-agar is the best substitute.

Agar-agar comes in 3 forms:
-          Bars
-          Flakes
-          Powder

Basic recipe: How to set or jellify liquids using agar-agar or kanten

1 bar agar (0.25 oz) or 2 tablespoons agar flakes or 2 teaspoons agar powder
Note: Agar powder is a direct substitute for gelatin. So 2 teaspoon gelatin = 2 teaspoon agar powder
2 cups liquid (fruit juice, wine etc)

Place the agar in the liquid and bring to a boil. Boil until the agar melts completely. Continue cooking on medium-high heat for about 5 minutes or till the mixture begins to gel and thicken. Pour into a serving  dish and place in the refrigerator to thicken further. The liquid will get thick and jell-o-like in about an hour.

Acidic juices may require more agar to set.

As you can see from the set gelees above, agar, unlike gelatin doesnt set clearly. So if your gelee is a little cloudy, dont worry, thats how agar sets. You can use any fruit juice you like for these gelees. I like sparkling juice or sparkling wine, champagne, or prosecco for this because the little bubble suspended in the gelee are beautiful.

substitute these ingredients in the recipe below

- Coffee and coconut milk gelee. Serve this after an asian style meal
- Champagne or Prosecco gelee with orange segments. Like a jellied mimosa; great for a holiday brunch
- Sparkling apple juice gelee with pomegranate seeds. A beautiful, refreshing dessert
- Lemonade gelee with lemon zest. Great end to a summer lunch, or serve this as a palate cleanser inbetween courses

Sparkling Grape Juice or Sparkling Wine Gelee with Cranberries Recipe


Serves 2-3

½ cup water
½ cup sugar
½ bar of agar (or 1 tablespoon agar flakes or 1 teaspoon agar powder)
1 ½ cups sparkling grape juice or sparkling wine
a few cranberries

Run a little water over the agar bar to make it soft. Then tear it into small pieces. Omit this step if using flakes or powder. In a small saucepan, bring the water and sugar to a boil. When the sugar just about melts, add the agar pieces. Boil gently till the agar has completely melted. Continue cooking the liquid for another 4-5 minutes. Turn off heat. Slowly pour in the sparkling juice or wine. Stir gently, being careful not to release too many bubbles. Pour this mixture into champagne flutes or a serving dish, sprinkle cranberries on top and place in the fridge till set, about 1 hour.
