Triple Smoky Mac and Cheese Recipe from Herbivoracious Cookbook and a Giveaway

When I received a review copy of my friend Michael Natkin’s new cook book Herbivoracious: A Flavor Revolution with 150 Vibrant and Original Vegetarian Recipes, I was so thrilled and so hungry. Thrilled because Michael is my favorite vegetarian blogger and his site is full of creative vegetarian recipes. Hungry because Michael’s book is one of the best vegetarian cookbooks around, and all the recipes look delicious. Whether you are a vegetarian or an omnivore, you are going to love this book. And it has plenty of vegan and gluten-free recipes as well.

Michael has been a vegetarian since he was 18. When his mother fell sick, he started cooking her macrobiotic meals at home. Since then, Michael has been a devoted vegetarian. And his passion for food is so evident in his uber successful blog, Herbivoracious (same name as the cookbook!).

The blog is an encyclopedia of information, filled with recipes and tips. How does polenta with pan roasted porcini, tomato confit and chevre sound to you?! My personal favorite Herbivoracious blog recipe is the chickpea, spinach and tomato soup – simple yet packed with flavor.

When I received Herbivoracious, the cookbook, I had great trouble deciding what recipe I should make for this post. The chickpea and olive tagine with ras el hanout ( a North African spice mix) sounded yummy. As did the blackbean soup with orange jalapeno salsa, 10 minute chickpea salad with feta and basil, grilled tofu and pepper tacos, red curry delicata squash, and..well..pretty much all the recipes in the book!

I finally decided to make the triple smoky mac and cheese. Because its cheesy, spicy and comforting – exactly what I needed on a cold, wet Portland evening. It’s the best mac and cheese I’ve had. It was easy to make, and tasted like it came from a high end restaurant. Meat lovers are sure to love this vegetarian mac and cheese. It has so many great smoky flavors going on, my husband thought it had bacon in it! Michael says you can either use smoked cheddar or smoked mozzarella in this recipe. The smoked cheese, plus smoked paprika and chipotle peppers make this mac and cheese wonderfully smoky.

Triple Smoky Mac and Cheese Recipe

Serves 6 to 8

Ingredients

1 pound elbow macaroni (Sala’s note: I used penne because thats what I had on hand)
6 tablespoons (3⁄4 stick) unsalted butter
1⁄4 cup all-purpose flour
4 cups whole milk
Half an onion, finely diced
1 tablespoon smoked paprika
1 teaspoon fresh rosemary leaves, minced
1 canned chipotle chile in adobo sauce, minced, or
1⁄4 cup Frontera brand chipotle salsa
1 teaspoon dried oregano
1⁄4 teaspoon nutmeg (preferably freshly grated)
8 ounces smoked cheddar, grated, or substitute regular cheddar if you can’t find smoked cheddar
8 ounces mozzarella (substitute smoked mozzarella if you’re using regular cheddar), grated
Kosher salt
1⁄2 cups Homemade Bread Crumbs made with 2 cloves minced garlic added. Recipe in the book.

Method

1. Bring a large pot of salted water to a boil. Boil the macaroni according to package directions, draining when it is just becoming aldente. This will bake more in the oven, so don’t overcook it. Drain, transfer it to a bowl, and toss with 2 tablespoons of the butter.

2. Preheat the oven to 350°F and grease a 9 x 13-inch baking dish. (Sala’s note: I baked the mac and cheese in a cast iron skillet instead of a baking dish)

3. Melt the remaining 4 tablespoons butter in a medium saucepan over medium-low heat. Sprinkle in the flour and whisk pretty constantly for 3 minutes. Whisk in the milk. Add the onion, smoked paprika, rosemary, chipotle, oregano, and nutmeg. Bring to a gentle simmer and keep cooking, whisking occasionally, until the sauce begins to thicken, about 5 minutes.

4. Reduce the heat to low. Whisk in the grated cheeses, a handful at a time, stirring each addition of cheese until melted. It is important to do this gradually, to avoid graininess.

5. Taste the sauce and adjust the seasoning to your preference. It will probably need just a little salt, depending on the cheeses. Add more chipotle if you’d like it hotter. Remember that the sauce should be pretty intense, because it needs to flavor a full pound of pasta.

6. Stir the macaroni into the sauce. Pour the macaroni into the baking dish. Scatter the bread crumbs evenly over the top.

7. Bake until you can see bubbling around the sides and the bread crumbs are nicely browned, about 30 minutes. Let the dish rest for 5 to 10 minutes before serving.

Grilled Portobello Mushroom, Roasted Red Pepper and Mozzarella Sandwich or Burger

I received the below facebook message one day from my friend, Aditya. Being the great mushroom aficionado that I am, how could I have posted all  but one portobello recipe on this site?!  Ive featured other mushrooms on Veggie Belly, like the shitake mushroom soup, morel mushrooms over polenta, beech mushroom flat bread, and my recent morel mushroom pasta with fiddleheads. But the mighty, meaty portobello has been in all but one recipe on veggie belly. I defenitely had to remedy that!

These portobellos were larger than the palm of my hand! But they turned out to be the perfect size for these sandwiches/burgers; they shrunk just enough while cooking on the grill, to fit in the kaiser roll. Portobello or portabella mushrooms are delicious in burger style sandwiches because they are meaty in taste and texture. They are often called the ‘steak of all mushrooms’! They also take to grilling very well. I used beefsteak tomatoes in this sandwich, again, for their meaty texture. But any tomato will do.

Grilled Portobello Roasted Red Pepper and Mozzarella Sandwich/Burger Recipe

makes 4 sandwiches

4 large portobello mushrooms
2 tablespoons olive oil
1-2 tablespoon balsamic vinegar
1/2 teaspoon italian seasoning
salt & pepper
4 kaiser rolls or burger buns or 8 slices of any other loaf bread
2-4 tablespoons mayonnaise or my white bean asparagus hummus
2 tablespoons chopped fresh basil
4 slices beefsteak tomato
4 slices fresh mozzarella (or whatever cheese you like)
4 large pieces of store bought, jarred roasted red pepper
1 cup salad leaves or lettuce of your choice

Heat an outdoor grill to 400f.

Wipe the mushrooms clean. Using a spoon, scrape off the gills from the mushrooms. Whisk together olive oil, vinegar, italian seasoning, salt and pepper. Brush the olive oil and vinegar mixture all over the mushrooms.

Place the mushroom caps on the grill and grill about 2-3 minutes on one side. Flip the mushroom caps, and grill another 2-3 minutes. (If you like your cheese melted, place cheese slices on portobello caps (gill side) after you have flipped them). Remove grilled mushrooms to a plate, and cover to keep warm. If you are not using an outdoor grill, broil the mushrooms in the oven; about 3-4 minutes (or till browned a little) per side.

Cut the bread roll in half. Spread some mayonnaise or my white bean asparagus hummus  on both halves. Sprinkle some basil on top. On the bottom half of the bread roll, arrange the grilled portobello mushroom, tomato slice, mozzarella slice, and roasted red pepper. Top with lettuce or salad greens. Place the other bread slice on top. Secure sandwich with a toothpick. Serve with a side of soup or salad and fries or chips.

Homemade White Pizza

White Pizza

There is a little Italian restaurant near my house. Its owned by a Pakistani, so we call it Pakistani Italian. The food is homely and wonderful. We particularly like their white pizza. Their white pizza appeals to me because its garlicky, thin crust and has no tomato sauce.

My husband came back from a trip to Ohio and I wanted to order the white pizza, but it was too late and the restaurant had closed. So I decided to make the pizza myself. It was quick, easy, and I don’t think we’ll eat pizza out anymore! Besides, you could have so much fun with the toppings!

Pillsbury Pizza dough – 1 can
Alfredo Sauce – 3/4 cup
For toppings:
Mushrooms – 1 box, green pepper – 1 and thyme
or
Broccoli – 1 cup , frozen spinach – 1/2 cup, nutmeg – pinch and Italian seasoning
or
black olives, basil and pine nuts
Garlic – 1 tsp minced
Mozzarella cheese – 2 cups

Pre heat oven to 400 degrees. Lay out the pizza dough on a non stick cookie sheet or baking pan. Press and stretch the dough to fit the pan. Pour the Alfredo sauce over the dough and spread evenly. Then sprinkle the garlic and cheese on top. Then add the toppings over the cheese. Bake for about 17 minutes.

To prepare toppings

For mushroom green pepper pizza – slice the mushrooms and peppers. Saute mushrooms on high for 2-3 minutes. Add the thyme and green peppers.

For broccoli spinach pizza – cut the broccoli into small florets, blanch in salted boiling water. Drain and sprinkle Italian seasoning. Saute the spinach and squeeze out any water. Sprinkle some nutmeg over the spinach.

For black olive basil pine nut pizza – bake the pizza with only the black olives. While pizza is cooking, toast the pine nuts in a non stick pan. Chop the basil. In the last 1 minute of baking, add the pine nuts and basil to the pizza and return to oven.
